I made this recipe for the first time, somewhere at the middle of the last year. I do not think there is another dessert so easy to do and that requires just a few ingredients. Or at least I can not remember anything.
So, you only need eggs, mascarpone, sugar, ladyfingers, coffee (in my case Nesquick) and cocoa. I pulled out of the equation alcohol. Although, I’m going to try next time with a liqueur wine (Marsala, Malaga I read everywhere about it) when the girls are on holidays.
- Ingredients that you need:
750 gr mascarpone
a bag of ladyfingers,
8 tablespoons of sugar
120 ml espresso + ½ cup water (for the girls I use Nesquick).
Cocoa to garnish.
For the cream. In a mixer with the whip attachment, whip yolks and sugar until thick and pale in color. Add mascarpone and whip until well incorporated. In a separate bowl, whip egg whites to a soft peak. Whip to a stiff, glossy peak. Fold whites into mascarpone and yolk mixture.
In a separate bowl, combine espresso and water. Soak 1 ladyfinger at a time in the espresso mixture. Arrange soaked ladyfingers close together in neat rows until the bottom of the pan is completely covered. Pour one spoon of the mousse over the ladyfingers and smooth with a rubber spatula. Create another layer and chill until set.
I love coffee and perhaps this is the reason I’m crazy about this dessert. Refrigeration is an integral part of the recipe, as important as any of the ingredients (for at least 4 hours).
